For your dipping pleasure, 1,000 island dressing from scratch.
The best part though is that it only has three ingredients!
It doesn't even compare to store bought. I don't even know what store bought is made of actually.
The taste doesn't compare as most things that are homemade usually blow store bought out of the water.
Take a cup of your homemade mayo which you can learn to make HERE.
Then put 2 tablespoons of organic ketchup in with the mayo.
Add 2 tablespoons of homemade canned dill pickle relish.
Stir it up and you're done. It takes less than 5 minutes to make! The flavor comes from the relish and the homemade mayo. If you do not have homemade canned relish you certainly can use store bought if you need to. I have also taken some of our homemade canned pickles and put them through the food processor instead of opening up a new can of relish.
The dill and the vinegar from the pickles is what gives it the burst of flavor.
You also don't need to add any salt because of the salt in the pickles. It's plenty.
We make 1,000 island dressing for our Reuben sandwiches or Reuben egg rolls!
This is a pretty quick throw together dinner. I buy egg roll wrappers, shred some Swiss cheese, add a little sauerkraut and some corned beef. Roll it up and drop it in hot oil for a minute or two on each side.
Dip it in your 1,000 island dressing and you are good to go!
The dressing is non dairy but the rueben is not. You can just leave the cheese out of the egg rolls and it will still be yummy! :)
